Healthy oatmeal cookies

Eurgh, healthy can be so incredibly boring. Don’t get me wrong, everything in moderation and all that, but I find it very hard to get into eating 'clean' when I have little to no resistance to eating cake. I've tried, but I just don't try hard enough, so I've had to work out some kind of balance between healthy and fat. Now, to your surprise, I actually exercise and don’t enjoy being chubbier than what is accepted by my jeans. I eat naughty yummy treats and I am proud, but I’m not a piglet everyday (like I used to be not so long ago when I was an actual tubster and could barely move without hyperventilating). I now view these kinds of treats as exactly that - treats, and I watch what I eat after I gobble up anything naughty. It really is all about moderation.
 
When I switch into my holy-crap-my-clothes-don’t-fit-I-must-get-skinny mode, and need to lose the extra 14 pounds of fat I had no idea how had got there, I do not eliminate foods but I do limit myself to one or two of the really bad treats a week. However, given that I love sugar, I sort of want something sweet everyday. Asides from a cup of tea, I find a banana helps give me my sugar hit, but when ye humble banana is not enough, I make these bad boys. I even make them as a normal yummy treat because they are genuinely scrumptious (my very hungry 6ft5 rowing brother and poor starved chap even ask me to make them for them too).
 
These are like a cakey-cookie and are accepted by people who take healthy food pretty seriously. There’s no sugar, butter, eggs, flour or nuts yet they’re still tasty, moist and sweet. They are a wonderful healthy alternative to naughty cookies, making them a great snack or even a handy breakfast cookie on the go. They are the easiest things in the world to make, and help use up those gross festering spotty bananas you had left in the fruit bowl.

 

Healthy oatmeal cookies recipe

You’ll need: (for 4 cookies, enough for 2 people)

  • 2 bananas (the riper and grosser the better)
  • 1 mug of oats
  • 1/2 teaspoon of ground cinnamon
  • 2 teaspoons of runny honey (optional - honey is not essential if you are a vegan, or are watching sugar intake – the bananas are already full of natural sugars for sweetness)

 

Instructions:

1. Pre-heat your oven to 180ºC.

2. Mush up your bananas, make them sloppy and sludgy.

3. Pour in your oats and have a good mix.

4. Pop the cinnamon in. 

5. If you like a little extra sweetness, squeeze and stir in the honey. 

6. Divide into four and shape in to blob shaped things.

7. Put into the oven for 10 minutes.

8. Allow to cool for 5 minutes.

9. Consume.
